Corn Bread Muffins

1 ½ cup Cornmeal

½ cup flour (white or wheat)

2 tablespoons sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 ¼ cup buttermilk

¼ cup applesauce

1 egg

2 tablespoons oil

1 In a large bowl, combine the first six ingredients. Combine wet ingredients, then stir into dry ingredients just until moistened. Fill greased muffin cups 2/3 c. full. Bake at 400° for 18-20 min.

Servings: 12

Yield: 1 dozen
